Last night Scott and I finally got to see what the new Whole Foods expansion looks like! The WF here in Boulder spent the last who knows how long expanding into an old Barnes and Noble right next door.  Result?  EPIC PROPORTIONS of food, an added eating area, asian/mongolian cuisine, giant salad bar, pizza, sandwich bar, BBQ station, bakery, pasta bar, sushi section, and an endless selection of whatever else you can think of.  I think I took a good 15 minutes just trying to decide where/what I wanted to eat.

I ended up adding bits and pieces of probably over 10 or 11 dishes together from the self serve bars– most of it Indian Cuisine (curry = WIN!)… I completely lost track of it all.  I was like a kid in a candy store Smile

Green beans with almonds, falafel patties, cauliflower something, chickpea marsala, a berry and nut quinoa dish, kung pao tofu, curry potato something, a stir fried vegetable dish, wild mushroom pilaf, red lentil something, something with lamb in it?, and a little bit of a type of meatloaf….  I can see why people swoon over the salad bars.  My xmas WF gift card from my wonderful in-laws will be put to GREAT use in the next few days weeks! Winking smile

We followed that with going to see Tron.  Not a horrible movie by any means, but there were definitely a few cheesy scenes and added “verbage” that sort of lessened the coolness factor.  I brought along a nice steaming HOT latte because my hands and feet were completely numb from walking around (and believe me, we didn’t walk that much at all!)

This morning I really slept in – 8am wake up call!! That’s just about the latest I will ever wake up, just on moral principles Winking smile.  My gym is doing special classes today for New Year’s Eve and I definitely wanted to hit up the 1.5 HOUR long spin class (holy cow that sounds painful!).  I think it’s actually going to be run by 2 or 3 people, so having them trade-off will only make it harder for everyone else (that offsets all the appetizers and drinks of tonight, right? Winking smile).  After I got up, I went straight to the fridge to dig out some overnight oats I made the night before… in a peanut butter jar that was almost empty.  That’s my absolute favorite kind because you get a TON of pb in every bite (and who doesn’t love licking scraping the jar clean?)

My mix this time was everything I could find near the kitchen: 1/4 cup oats, 1/2 smashed banana, 1/2 cup unsweetened chocolate almond milk, 1T chia seeds, 5T canned pumpkin (I finally finished off a can!), 1/2 tsp cinnamon, 1/2 tsp Maca Powder, dash of both ginger and nutmeg, 1/2 tsp vanilla, 1 tsp cocoa powder, 1T raisins (and of course all the PB in the jar… somewhere around 2T, maybe a bit more?) .   I got even more carried away when I opened the jar this morning, and decided to throw on extra toppings: a drizzle of agave nectar, a few cracklin oat bran pieces, and a small dollop of strawberry jam.  I’m sure I’ve had my daily allotted amount of peanut butter by now!

Yup, I have a feeling that’s going to power me riiiight through spin class Winking smile.  Either that or everyone in the class is going to find out what I had for breakfast….
