Hey!!

I’m home sick today Sad smile… but that means I’ve got some blogging time Open-mouthed smileOpen-mouthed smile  Things have been sort of nuts lately, but in the past three days we’ve gotten a ton accomplished.  Our back door was finally installed so now we can progress with the rest of the flooring.  Oh I SO can’t wait to have a livable area again Smile.

I’ve had some good workouts and eats recently as well (minus today.. blegh.  However, I never lose my appetite Winking smile).

Farro with sugar snaps, red pepper, mushrooms, chicken, marinara sauce, and a cheese stick with a few crackers, carrots, and water.

Totals: ~430 cals, 47 minutes.  I’ve no idea how far I rode because my bike broke about 1/3 of the way into class Sad smile

Refueling with a WW tortilla, a packet of Justin’s Maple Almond Butter, the other half a banana, and coffee.

Cherries for dessert, water, and a HUGH JASS salad (spinach, red pepper, baby carrots, grape tomatoes, cucumber, hummus, chicken, a few crackers, and light balsamic vinaigrette dressing.

Cornbread muffins Smile… definitely had to eat one right out of the oven for “taste testing”.  I have a thing for muffins apparently.

Now that we’ve got this thing done, now we can get going with all the other renos Smile  We’re definitely off to celebrate this – it’s been a LONG two months…’

Happy long weekend Open-mouthed smile  Just knowing I don’t have to go to work tomorrow relaxes me quite a bit!

Scott and I have had a super busy weekend so far.  I woke up yesterday morning and had a hankerin’ for a Banana Scramble!

(Recipe generalized from Ashley’s list – you can’t go wrong with any of them Winking smile)

Ingredients

  • 1/2 banana
  • 1T chia seeds
  • 3T Rolled Oats
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla
  • 1/2 scoop BioChem Vanilla Protein Powder
  • 2T Unsweetened Chocolate Almond Milk

Directions

Mash ingredients together with a fork until banana is creamy and set aside for a few minutes so the chia seeds absorb some liquid.  Start a pan on medium/low heat – divide mixture into two.  With a spoon, shape into two patties on the pan and cook each side for approximately 3-4 minutes.  Note: these are NOT easy to flip… they are crumbly!

I had mine with a toasted whole wheat bagel thin, topped with a bit of PB and strawberry jam… and coffee.

Absolutely incredible way to start the day!  This was so good I did a repeat of it for breakfast today Winking smile.  Right after, Scott and I got to work painting another room in the house…took us 2 gallons of Behr “Macchiato” to cover it (and two coats!).

In between coats of paint, lunch was served!  A salad beast with spinach, cukes, carrots, orange pepper, a veggie patty, crackers, water, and a Chobani Pineapple yogurt/granola.

After 4 hours of painting, my arms were DEAD!.  So, we hit the pool for the afternoon.  Seriously, painting IS a workout.  I brought along a perfectly juicy nectarine and some almonds to snack on Smile

But, the best part of yesterday was this!

A too-gigantic-portioned piece of Tilapia with Panko, steamed green beans, and Farro with a tomato based sauce.  Some red vino on the side because that’s all we had Winking smile.
