Blackberry Buckwheat Bake (Based off Ashley’s French Toast Buckwheat Bake)

Topped with ½ sliced banana. 1T Almond butter, 2 tsp Maple syrup


  • 1/3 cup Buckwheat Flour
  • 1T chia seeds
  • 1 tsp Cinnamon
  • ¼ tsp baking powder
  • 2T Almond Milk
  • ½ mashed banana
  • 1 tsp Vanilla
  • 2 Eggs
  • ½ cup frozen blackberries


Preheat oven to 350 degrees and lightly coat an oven safe dish (I use a 20oz soup crock).  Mix dry ingredients in separate bowl.  Beat eggs in separate bowl, then mix in wet ingredients.  Mix all and pour into oven safe dish and bake for approximately 30-35 minutes. 

This held me over for a good 5 hours Open-mouthed smile 

Lunch: Kashi Chicken Florentine and an apple (not eventful, but is IS food… which is awesome!)


Small Packet of Orange Ginger Cranberry Granola.  I’m definitely not a fan of ginger (gross!)
