Happy Monday!!  I’m a bit bummed that my Steelers didn’t win the Super Bowl last night… although it was a pretty decent game (and awesome commercials!!)  Besides the little mishap with the wording of the National Anthem (Sorry Christina Sad smile), and the fact that Green Bay’s receiver, Nelson, missed about 6 catches (I see a trade in the NFL draft for him…FAIL) it was pretty darn exciting!  Scott ended up winning $50 from a scoring thing his company did Open-mouthed smile so that’s always awesome.  I had SO much food last night too (cookies, cake and ice cream (x2), Falafel, Nachos, drink, chips and salsa, meatballs, dip, and veggies, so it definitely felt good to hit up a spin class this morning because I was properly “carb-loaded” Winking smile.

I had the usual ½ banana, water, and ½ of a Chocolate Brownie Clif Z Bar when I got up this morning (still can’t believe I was hungry!)

Workout: Energized Endurance Ride

I got lucky this morning too – our regular instructor got “Food Poisoning” (aka… I think she partied too hard at her Super Bowl party – she still showed up at 5:45 am, but then left!), so we had a substitute Smile.  It turned out to be the girl who teaches on Tuesday nights (I usually don’t make her class), but she’s my age.. and she throws a pretty intense session!

Totals: 456 cals, 16.3 miles, 52 mins

Post spin food was overnight oats: 1/3 cup rolled oats, ½ smashed banana, 2/3 cup unsweetened chocolate almond milk, 1T chia seeds, ½ tsp vanilla, sprinkle of cinnamon, ½ cup blueberries.  I topped that all with the other half of the Clif Z bar, peanut butter, and a teeny bit of Agave.

Mega yum!!  This, along with some coffee brought me right into Monday morning work mode.

This morning was really crazy too – as soon as I sat down I had to run back to the lab to assemble a few things for testing… which ended up taking about 2 hours.  Right before a meeting I nibbled on some cocoa roast almonds (I only have 1 little package left Surprised smile).

I was only starting to get hungry, but I knew by the time the meeting ended I’d be starving (aka… not paying much attention to what I need to be)

Lunch today was sort of a random assembly of fridge material, but I’m happy with the amount of color I got in it!

a toasted whole wheat English muffin, 3 turkey slices, a cheese slice, hummus, salsa, slices of green pepper, cherry tomatoes, a sparkling water, and a peach for dessert.  This was a SUPER filling lunch – I normally don’t add this many components to a meal – I tend to graze throughout the day so my “main” meals aren’t gigantic.

About 4 hours later (large lunch = awesome!) I tried out an Earnest Eats Choco Peanut Butter bar – what’s NOT to love about chocolate and peanut butter?!

It was in-between crunchy and chewy, but slightly more on the chewy side.. and tasted deeeelicious Open-mouthed smile!  I found this at Sprouts Farmer’s market last week, and I’m definitely going to be picking up a few more the next time I’m there.

That got me through the end of work, and now I’m trying to come up with something for dinner that’s still healthy.  After yesterday, my body wants more vegetables and less sugar!  While I’m cooking, I’m pretty sure The Bachelor is going to be on!

How was your Super Bowl party?  Did you party hard or hardly party? Winking smile
