Way too much happened over the weekend to blog it all… so here’s a short list Smile

  1. Saturday Morning’s Pear Spice Pancakes


2.    Saturday’s Workout: 15 minutes rowing machine, 30 minutes elliptical.

Totals: ~411 cals, 48 mins

I wasn’t able to convince Scott to go with me however.

3.   Brittany got me the most AWESOME Christmas ornament!!!!!


4.   We hit up Great Harvest Bread in Boulder for some free slices o’ bread.  Sadly, we missed out on the cinnamon raisin because we were too late Sad smile

5.   We spent a few more hours this weekend looking at some new places to live!!! SmileSmileSmile I think we MIGHT stand a chance of moving in a year lol.

6.   Modmarket!!!!  That’s what happens when I’m driving around, I’m hungry, and I have a coupon SmileSmile  I had this with my other Kombucha = Tasty!!!



7.   Sunday’s Dinner

“Spaghetti and Meatballs” (Yup, the quotes ARE necessary Smile)


Ingredients (not quite the official recipe because I literally THREW it together Smile)

  • One small Spaghetti Squash
  • 1/2 medium onion, chopped
  • 1 clove of garlic
  • 1-1.5 cup Boca Crumbles
  • 2 small cans of unsalted tomato sauce
  • 1 cup low fat Ricotta Cheese
  • 3 cups of Kale
  • 1 tsp Olive Oil
  • 1/8 tsp salt
  • a pinch or two of Italian seasoning


Preheat Oven to 375 degrees.   Slice Spaghetti squash in half length-wise.  Scrape out insides and remove seeds (but save those if you want to roast them!).  Lightly coat a baking dish with cooking spray, place squash halves rind side up.  Bake for about 30-40 minutes until you can poke through the squash pretty easily with a fork.

Heat the olive oil in a pan, chop the onion, and then sauté it Smile.  Cook the Boca Crumbles according to the package, and then combine with the onions.  Add in the tomato sauce, ricotta cheese, kale, and the salt/spices.  Allow to come to a simmer.

Once squash is cooked, let it cool for about 10-15 minutes, rind side down.  Scrape the strands out of the squash by running a fork down the middle.

Combine all in a bowl and eat away!! Smile
